Granola


1 cup butter
1 cup brown sugar
½ teaspoon salt
1 teaspoon cinnamon
8 cups quick oats

In a large saucepan, melt the butter and the brown sugar together. I find whisking helps to incorporate them better. Let it simmer for 2-3 few minutes. Add the salt and cinnamon and mix well.

Pour over oats. Coat the oats well with the mixture. Spread the granola into 2 cookie sheets (with sides) and bake at 350° for 10 minutes, until golden brown. 

Cool granola completely on pan, then break up into pieces and transfer to a container. Add dried fruits, nuts, etc.
